Sushi At Shilla Hotel's Ariake

The clean uncluttered work counter is a clear sign of a chef being on top of his game. Boy did the abalone looked wonderful, steamed for 2 1/2 hours and 'showing off' their glistering caramelised sheen from their natural jus.
Fast Chef and even faster Glutton Mouth so no photos of the delicately balance sushi accept the one below.
Like all good Jazz songs, it is the standards that are the most difficult to get right. You simply can't cheat, as everyone knows the standards. Just like Maguro sushi with its balance texture, and serving temperature begs you to clear your palate with some marinated ginger so that the Maguro can give us all its got; hiding behind is the plump Amaebi sushi, refreshingly sweet and crunchy with none of the mushy feeling i'm all too use to. It doesn't get much more honest than this!
